Hearty Pork Chops
March 28, 2008While flipping through the March 2008 edition of Parenting, I found some recipes that look delicious. One is Hearty Pork Chops.
Prep: 10 Minutes
Bake: 40-45 Minutes
Yield: 4 servings
Ingredients:
4 bonless center-cut pork chops, 1 lb small red potatoes
1 tsp jarred pre-chopped garic, 1/4 cup water
1 tbs olive oil, divided, 1 box frozen peas and onions
How To Cook:
- Preheat oven to 375
- Season pork chops with salt and pepper
- Heat 1 teaspoon of oil in a large ovenproof skillet over medium-high heat
- Brown port chops on both sides for about 3 minutes each side
- Remove from heat and add peas and onions, quartered potatoes, and garlic
- Drizzle with remaining oil
- Sir gently to combine
- Add water
- Cover skittlet with lid or foil
- Place in frepheated oven and bake for 40 to 45 mintues or until potatoes are tender

I will have to try this! I bet it would also be good to cook chicken breasts this way, too. Thanks for sharing.
