Fiesta Taco Casserole
I made this recipe for the first time last Monday. It instantly became my husband’s favorite and he even wanted me to make again last night for the inlaws. I must admit, it was pretty good.
Fiesta Taco Casserole

Ingredients:
1 lb lean (at least 80%) ground beef
1 can can (15 to 16 oz) spicy chili beans in sauce, undrained
1 cup Old El Paso® Thick ‘n Chunky salsa
2 cups coarsely broken tortilla chips
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
Directions:
1. Heat oven to 350°F. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.
2. In ungreased 2-quart casserole, place broken tortilla chips. Top with beef mixture. Sprinkle with onions, tomato and cheese.
3. Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange tortilla chips around edge of casserole. Serve with lettuce and additional salsa.

This sounds really yummy and easy! I wonder how it would be with Fritos instead as we have Frito fanatics in my household…

Thanks for stopping at Timothy Moms today Courtney! The challenges are there for anyone to join in at anytime, so don’t feel like your “late”. I just wanted a place I could challenge myself and other moms to take the time to talk about God’s word with our kids.
I usually give my boys a choice of stories at naptime, but today I chose from a Bible story book…they didn’t like having their choice taken away, so I guess letting them choose a Bible story would have been a better idea.
Oh, and this recipe looks great! I’ll have to print it up and try it!
