I recently started baking a lot and was trying different bread recipes. I have found a ton of great recipes online that I would love to try, but for a lot of them you need a bread machine, which I do not have. However, a bread machine is absolutely going on my wish-list. I thought I would share two easy recipes I have found that my family loves.
Cinnamon Raisin Bread
Serves - 8
2 cups whole wheat flour
1/3 cup brown sugar, packed
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1 cup nonfat buttermilk
1/4 cup applesauce
1 teaspoon vanilla extract
1/2 cup raisins
1. Combine the flour, brown sugar, baking soda, baking powder and cinnamon; stir to mix well. Add the buttermilk, applesauce and vanilla extract; stir just until the dry ingredients are moistened. Fold in the raisins.
2. Coat an 8″ x 4″ loaf pan with non-stick cooking spray. Spread the mixture
evenly in the pan. Bake at 350 degrees for about 45 minutes, or until a wooden pick inserted in the center of the loaf comes out clean.
3. Remove pan from oven and let sit for 10 minutes. Invert the loaf onto a wire rack to remove bread from pan. Turn right side up and cool before slicing.
Double Quick Dinner Rolls
Prep Time:10 min
Start to Finish:1 hr 30 min
Makes:1 dozen rolls
2 1/4 cups Gold Medal® all-purpose or unbleached flour
2 tablespoons sugar
1 teaspoon salt
1 package regular or quick active dry yeast
1 cup very warm water (120°F to 130°F)
2 tablespoons shortening
1 egg
1. Mix 1 1/4 cups of the flour, the sugar, salt and yeast in large bowl. Add water, shortening and egg; beat with spoon until smooth. Stir in remaining flour until smooth. Scrape batter from side of bowl. Cover and let rise in warm place about 30 minutes or until double.
2. Grease 12 regular-size muffin cups. Stir down batter by beating about 25 strokes. Spoon into muffin cups. Let rise 20 to 30 minutes or until batter rounds over tops of cups.
3. Heat oven to 400ºF. Bake 15 to 20 minutes or until golden brown.
